    Mike Hall works with local farmers to hand select the purest and highest quality Old Mission Peninsula Juniper for his closely guarded gin recipe. With each level of distillation the purest spirit rains through the 5 plates and 20 caps and trays of the still. The distilled grain and perfectly selected juniper produces a classic “London Dry” style of gin that is light bodied and great for mixing, infusing or straight out of a mason jar.

    Distilled in the ways of the great North and inspired by a world of cherries, we created Civilized Sakura. Mike Hall hand crafts vodka form cherries on our custom built still. With each level of distillation the purest spirit rains through the 5 plate sand 20 caps and trays of the still. The distillation of the cherries is expensive, but it produces a character that is unmatched. The distilled cherries and natural cherry flavor renders it delightfully smooth, with a cherry nose and distinct sweetness. This cherry flavored vodka is perfect for sipping or mixing!

    This fine peated malt is a salute to the Celtic tradition of fine single malt scotch. We hope our ancestors are proud! Mike Hall collaborates with other distillation professionals to select the malting barley and create Civilized Single Malt Whiskey. The barley is spread, soaked with water and germination takes place. Then the barley is moved to a kiln where the smoke from the fire stops the germination and flavors the barley to Civilized exacting specifications. This barley is ground in the Grist Mill before being soaked in the Mashhouse where the solids are removed and shipped to local farmers. The remaining wort is cooled and then distilled before being filled into barrels for storage. Each barrel is numbered and stored in a warehouse for maturation. Civilized Single Malt spends a minimum of three years in the wood before it’s ready!

    Unlike its Southern cousins, Old Mission Sour Mash Whiskey is made from barley and wheat malts instead of the traditional corn. The result is a spirit with a more rounded body with a hint of sweetness. This whiskey is then aged on medium roast French oak, charcoal filtered and proofed with Old Mission artisan well water.
